Yeah..Thats what I can call myself now after staying out of home for a couple of years..Eggs are interesting, both to eat as well as to cook (as they are the easiest and fastest to make..:)). The liking for trying something new everytime has taught me a lot of dishes with eggs but let's start with the very famous recipe for bhurji..
Now egg bhurji can be made in different styles according to your tastes and likes..Eg:
1)Egg bhurji-Home style
2)Egg bhurji-Hygienic
3)Egg bhurji-Unhealthy
4)Egg bhurji-Shabbir style
The last type of bhurji is a speciality of a person who's a bigger specialist at it than I am..(he owns a bhurji stall in Pune) and his bhurji remains our all time favourite food late at night when everything closes down...A lot of people from pune know it!!!
Ok so the recipe for Home stlye bhurji--
Ingredients:
Eggs-Depending on the number of people and their appetite
Green chillies
Cumin seeds (Jeera)
Onions (finely chopped)
Salt-to taste
Red chilli powder
Oil
Take a pan and heat some oil (1 tb spoon for 2 eggs). After the oil is heated properly add the cumin seeds..(TIP:put a couple of them to check if the oil is hot enough...You don't need to touch the oil..hahaha...If they make that sizzling sound then the oil is ready for the onions). Put the onions and the green chillies in some 10 seconds after the jeera. Reduce the flame if it is on high to low (this stops the onions from getting burnt). Turn the onions to a nice reddish-brown colour and add red chillies powder to it. Mix it well for around 2 mins and add the eggs. Beat them in the pan itself to whatever consistency you want. You can either have it "Kachcha Pakka" (half cooked--tastes amazing!!!my personal choice) or fully cooked till the egg breaks into small pieces. Your egg bhurji is ready to eat...
The whole process will no take more than 10 minutes and will taste yum!!!
